Amanitas

Lately I have been thinking about all the people on the shroomery that have mentioned the great flavour that Amanitas can have. Most notably Alan, who has said something like, Amanita velosa is the greatest tasting mushroom he had ever tried. Then of course, everyone who has said that Amanita muscaria is a very delicious mushroom also. Here are some pictures of what I assume to be Amanita muscaria var. guessowii, which is commons in my area-northwestern Ontario, Canada. As you will see I have found the color of the cap and volval remains can vary and also the concentric rings can appear shaggy and broken, not typical of other variants of muscaria.
These were found in a open red pine plantation and the sun faded their color

Thinking about eating these next two species, Amanita vaginata and Amanita amerifulva. Any fellow mycophagists ever tried them?
Not sure what these next two species are, I did not want to dig them up, they were the only ones around, any thoughts?

Thanks man, yeah first opportunity I get I think I'll eat any of the first three species posted, perhaps do a handrill friction fire and cook them on a rock, on site.

Nice pictures !! I think Amanita has some of the most elegant mushrooms on the fungi kingdom.

Great photos! I wish I knew more about this genus. But ive only ever found two species, both deadly poisonous.

The lichen is Cladonia rangiferina.
You should try the A. fulva and A. vaginatae.

Thanks guys, ya it is somewhat of a scary genus with the deadly poisonous species, however if you are 100% confident with Your ID of the species, I suppose there is no reason to fear them. Alan, have you tried any of those species, how were they?

A lot of the species in section Vaginatae are undescribed. You don't need to ID them to species, just ID'ing them to section is enough. It's best to save a few dried samples for Rod Tulloss though.
I eat Amanitas from section Vaginatae every chance I get, and I am always happy with the flavor and texture. Sometimes I make them chinese style with soy sauce and toasted sesame oil, they are quite good that way!
The best way I have found is to wrap them in tinfoil with some salt and butter and BBQ the tinfoil packets.

All mushrooms are best that way. Conventional cooking methods make a lot of the flavor molecules evaporate into the air.

i make vegetables that way, i use the bottles of mixed spices, like montreal smoked spice, or salmon spice
bbq, are my favorite way to cook, i dont even know how to use the broil on my stove lol

Awesome info Alan, I have been wondering about different cooking methods to help lock in that flavour, I will also definetly try the tinfoil wraps on the BBQ. Baked and dry sautéed mushrooms also seem to help to keep the flavour.
